Make Your Own Sunshine Cocktails

Who cares what the weather is doing outside? Get your gang of gin buddies round and make your own sunshine indoors, with these colourful cocktails!

You’ll be spoilt for choice with our top 5 sunshine cocktails so give into temptation and try them all!

HARVEY WALLBANGER

This is our twist on the classic vodka based cocktail, Pickering’s adds a gorgeous floral dimension with a touch of cinnamon and sherbet sweetness.

Add to your shaker/pint glass:

Plenty of ice
1 part* London Dry Gin
5 parts Orange juice

Seal and shake it all about, then strain into an ice-filled tall glass. Top with ½ part Galliano and garnish with a wedge of orange wedge, enjoy!

BERRY BELLINI

Always a popular choice, try this delicious gin twist with bold, red raspberries and PJ Gin Raspberry. It’s gorgeously fresh and fruity, perfect for spring.

Add to your shaker/pint glass:
Muddle 3 raspberries (put in a shaker or pint glass and gently press with a spoon to release the juice).
1 part PJ Gin Raspberry
½ part Fresh lemon juice
Plenty of ice

Seal it, shake it and fine-strain into a chilled champagne flute, top with prosecco and garnish with raspberries, mmmm.

EDINBURGH PUNCH

Put a spring in your step with Edinburgh Punch, made with their famous Rhubarb and Ginger Liqueur for a warming cocktail while we wait for sunnier days.

Add to your shaker/pint glass:
A small piece of ginger sliced and muddled (put in a shaker or pint glass and gently press with a spoon)
2 parts Edinburgh Rhubarb and Ginger Gin Liqueur
½ part Fresh lemon juice
Plenty of ice, seal and shake thoroughly.

Fine strain into an ice-filled tall glass and top with soda, ta da!

THE BURNING MANDARIN MARTINI

This martini with a kick of chili will keep you nice and warm even if it is pouring down outside! The Navy Strength Edinburgh Gin Cannonball is perfect for martinis, the lemon combines with the fruit juices, followed by spicy pepper, for a silky smooth flavour.

Add to your shaker/pint glass:
1 thin slice Serrano (or jalapeno) chili pepper and muddle (gently press with a spoon to release the juice).
2 parts Edinburgh Gin Cannonball
1 part Freshly squeezed lemon juice
1 part Orange juice
1 part Simple syrup
1 part Cranberry juice
Plenty of Ice

Seal and shake, shake, shake, approx 10 times. Run a wedge of orange around the rim of a coupe glass, then dip the glass into some sugar. Strain your cocktail into the sugar-lined  glass and garnish with a slice of chili.

GIN HONEYMOON

If you like to try something a little bit different you’ll love this! Plus you can make it for the non-gin drinkers *gasp*! This is our twist on the brandy-based cocktail,  Honeymoon, using Le Gin de Christian Drouin which is made from a calvados brandy base! Citrus, spice, a hint of rose and notes from the calvados apple make this a seriously light, tasty gin.

Add to your shaker/pint glass:
1 part Le Gin Christian Drouin
1 part Benedictine
⅓ part (or 2 dashes) Triple Sec
⅓ part (or 2 dashes) Fresh lemon juice
Beaten Egg white
Plenty of ice, seal and shake thoroughly.

Then fine strain into a chilled coupe glass, garnish with pineapple and enjoy!

* i. Parts made simple. Just stick to the ratios, so if you are making a jug ¼ of the jug could be 1 part, ½ the jug 2 parts. For 1 cocktail, 1 part would be approx 25ml and a dash 5ml, if you are making 2 cocktails, 1 part would be approx 50ml and so on - experiment and give it a try.

ii. If you don’t have a cocktail set you can shake the ingredients together in a pint glass using your hand or anything flat to seal the top and then strain through a sieve.

iii. If you don’t have a champagne flute or coupe glass you can always use a wine glass!
