Tovel’s gin is made in the province of Trento, Italy. This is not only home to the wonderful small batch distillery, if you journey 14km, you'll stumble across a beautiful, glacial 15,000 year old lake. Legend has it a Princess named Tresenga, daughter of the last king of Ragoli fought a battle for love, defending her man on the hills next to the Tovel Lake. Princess Tresenga was brutally killed by Lavinto, a knight who lusted after her and the lake turned red with blood. It’s said the rolling hills are still red to remind us of the courage Ragoli and their princess possessed.
Luckily for us, this story is only a myth. Today, the waters of the glacier flows from pure Dolomitic rock and filtered in the distillery, ready to be used in this amazing one of a kind gin. Tovel’s gin not only includes natural glacier water but has a wonderful 9 botanicals to explore, including Gentian alpine, locally picked Mountain pine, Angelica root, zesty local Lemons and of course juniper giving Tovel’s the amazing complexity that is so unique.
These botanicals have combined fantastically for a beautiful flavour. The aroma of aniseed and sarsaparilla bursts softly on the nose and develops on the palate along with lemon and more earthy flavours of angelica and gentian, in this gentle but full bodied gin. Tovel’s Gin has a beautifully long finish with the aniseed continuing to develop into licorice and vanilla flavours.
